Gourmet & Premium Food

Precise laboratory analysis enables the reliable verification of the origin, composition, and labelling of high-quality foodstuffs, ranging from plant identification and GMO detection to specialised authenticity testing for marzipan, vanilla, and cocoa and chocolate products.

Gourmet & Premium Food Testing

Given the globalised flow of goods, climate-related shortages of raw material, and an increasing number of RASFF alerts, ensuring the quality of high-quality food requires robust analytical verification of origin, purity, and labelling. In the gourmet and premium food segment in particular, authenticity and unadulterated composition represent the key challenge, as economic incentives for adulteration are on the rise. We address these risks with accredited analysis in accordance with DIN EN ISO/IEC 17025 and tailored testing strategies.

Comprehensive Testing Approach

The testing involves targeted authenticity and labelling checks using modern methods,
such as PCR, chromatographic, and sensory analyses, to ensure compliance with regulatory requirements
and identify risks early on.

Declaration

Verification of the declaration ensures that the labelling matches the actual composition in accordance with the Food Information Regulation and accurately reflects the actual composition. The ingredients are clearly identified using various analytical methods.

Plant Identification

Species identification using DNA-based methods (PCR) to verify botanical origin. This method is particularly relevant for complex matrices, such as spices or processed products. It supports to protect against economically motivated substitutions.

GMO Analyses

These analyses are based on standardised PCR methods for the detection and quantification of genetic modifications in accordance with EU legislation.

Special Analyses

They include the differentiation of marzipan and persipan (almond/apricot kernel) using PCR, the authenticity testing of vanilla, and the analysis of cocoa and chocolate products.

Tested Matrices Along the Supply Chain

We cover a wide range of complex food matrices and are tailored to the specific product type,
risk, and research question.

Marzipan

Authenticity testing through the differentiation of almonds and apricot kernels using PCR, supports compliance with quality standards and protects against economic adulteration.

Chocolate

Testing for foreign fats and sensory evaluation to minimise risks associated with inferior raw materials.

Herbs & Spices

We are testing for microbial contaminants and residues as well as for botanical authenticity and adulteration, which are particularly relevant in complex global supply chains.
